Rose’s Three Bean Chili Recipe

Rose’s Three Bean Chili Serves 4-6
1 TBL. Olive oil
1 onion, diced
1 – 1 ½ – jalapeno peppers (according to your level of spice) veins and seeds removed, finely diced
2 garlic cloves, minced
1 LB. ground beef
2 TBL. Just Cook – Taco Blend or Chili Powder
1 tsp. dried oregano
½ tsp. kosher salt
1 – 28 oz. can of whole tomatoes, (pureed until slightly chunky), or a can or pureed tomatoes
1 – 15 oz. can Pinto Beans, drained and rinsed
1 -15 oz. can Kidney Beans, drained and rinsed
1 – 15 oz. can Black Beans, drained and rinsed
In a large, heavy bottomed pot, heat olive oil on medium/high heat and add; onion, jalapeno peppers, and garlic. Saute for about 3 minutes until the onions are translucent. Add Just Cook Taco Blend and oregano. Saute for another 30 seconds until fragrant. Add ground beef, breaking it into small pieces with a wooden spoon. Sprinkle with salt and saute until the beef is cooked through. Add the tomatoes and beans. Bring the chili to a boil and then reduce to a simmer. Simmer for 30 minutes. Chili can be served with toppings of your choice!
