A brilliant dense green, evoking pistachios. On the nose it has the typical intense aromas of the oil of this area; grass, green tomatoes, artichoke and seaweed. Bordered by fruity notes of cedro and aromas of exotic woods. It finishes on the nose with hints of fresh herbs, headed by basil. This is a fruity oil, sharp, spicy and intense, in excellent harmony with vegetable soups, fresh cheese and above all with grilled fish and meats.

Pitted Destoned olive oils are born from the desire to highlight the essence of the two varieties Nocellara and Biancolilla, enhancing the organoleptic characteristics through the pressing of the olives only after they have been deprived of the stone.

Biancolilla- A light pale green color with yellow lights. On the nose, aromas of thyme and slight suggestions of carob, of almond and white pepper. Overall a marine sensation, almost brackish. The absence of oil from the stone renders it especially delicate and sweet.

It is excellent with raw fish, shellfish, seared chicken, as well as kid, salads and tomatoes.

Nocellara- Green color with lime yellow hints. On the nose, perfectly combined, are aromas of basil, green citrus and bergamot. A slight hint of the sea accompanies the taste. The lack of oil from the stone renders it delicate, almost sweet, but definite. Extraction of the oil without stones provides us with the essence of the aromas and unmistakable characteristics of this variety. Perfect with light, steamed food, cruditè, soups and salads above all.
