Olives are pressed within an hour of harvesting, thus capturing the essence of their flavor and preserving all the nutrients.  The truck is literally in the field. As we know, olive oil is a fruit juice and contains many antioxidants that are very beneficial to health.  Even though antioxidants vary from the cultivars of olive, there is a relationship between the timing and technique of production.  The most important is the olives are pressed and turned into olive oil in the shortest time after harvest.

A field blend from Italian-Tuscan cultivars, mainly Frantoio and Leccino and very little Pendolino. Medium Robust
Polyphenol: 507 PPH

Tasting Sensations:
Green Artichoke, Green Almond, Arugula. It is a lovely example of the cultivars with a green vegetables scent like arugula or artichoke, balanced pungency and bitterness, characteristic of Frantoio and Leccino which originates in Italy’s famous Tuscany region. The climate in Petaluma-Sonoma County, CA is much like Tuscany and here the variety makes a lovely oil. Harvest Fall 2023
