Artisan Pasta from Italy
Selected Durum wheat from Puglia in southern Italy gives this pasta extra flavor. The pasta is extruded through a bronze dye giving it a rough texture to better hold the sauce. It is dried at a low temperature for 3-4 days, causing it to expand greatly when cooked. This pasta is so tasty on its own that you could service it simply with olive oil and grated pecorino cheese!
Allow to cook in abundant boiling salted water (1 1/2 gallons per lb of pasta). Taste pasta to decide when done and drain. Add your favorite sauce and serve hot. Before draining set aside 1/2 cup cooking water in case the sauce and pasta is too dry. Use our pasta salt rocks to help salt the water.
